As the owner of El Bahia, a renowned Moroccan restaurant in the heart of New York City, I’ve always been passionate about more than just serving delicious cuisine. It was during a rather serendipitous encounter at a local farmer’s market that the idea for our sustainability-focused cooking classes first took root. I was chatting with a fellow entrepreneur, Amina, who runs a small organic farm upstate, when she mentioned her desire to share her knowledge and inspire others to adopt more eco-friendly practices in the kitchen.
