But I refuse to be paralyzed by the daunting task ahead. Instead, I choose to embrace a holistic approach to sustainability, one that encompasses every aspect of our restaurant’s operations.
It all starts with our supply chain. We’ve partnered with local farmers and producers who share our commitment to sustainable practices. From sourcing organic, seasonal produce to working with ethical meat suppliers, we’ve made it a priority to reduce our reliance on industrialized, resource-intensive food systems. This not only supports our local economy but also minimizes the environmental impact of our operations.
But our sustainability efforts don’t stop there. We’ve also implemented a robust recycling and composting program, ensuring that the majority of our waste is diverted from landfills.
